Corn Fritters

 Prep 10 mins / Cook 5 mins / Total 15 mins / Serves 6 to 8

  • 1 cup all-purpose flour
  • 2 ears of corn/cut corn off the cob
  • 2 eggs/separated
  • ½ cup sugar/white/granulated
  • 2 tsps baking powder
  • ½ tsp salt
  • ½ cup butter/unsalted or margarine/melted
  • 1 cup milk

Let’s Prepare!

Wash and rinse all vegetables before cutting and cooking.

  1. Combine flour, sugar, baking powder, and salt in a large bowl. Add milk, melted butter, corn, and egg yolks. Mix thoroughly. 

  2. Add the egg whites and fold into the mix. Do not over-mix.

  3. Heat a lightly oiled griddle pan or frying pan over medium heat. You can flick water across the pan. If it sizzles, it is ready.

  4. Pour or scoop the batter onto the griddle, using 1/3 cup for each pancake. Cook for 2 to 3 minutes until golden brown on both sides and serve hot.

  5. Serve with your favorite syrup.
